3 Healthy Propane Grilling Recipes for Summer

By: Craig Boyd, Wellness Manager at Dead River Company

Mmmm… smell that? Someone in the neighborhood just fired up the gas grill and is about to taste summer. Why isn’t it you? I hope it’s not because you think grilling means only hamburgers and hot dogs and those items are incompatible with your plan for healthy summer eating.

Grilling and healthy go together even better than lobster and butter.

As the Wellness Manager here at Dead River Company, I’m always finding and sharing healthy recipes with my co-workers—some of whom use their gas grill all year round! The rest of us, however, have waited until right about now to move out to the back yard and wipe down the picnic table.

My favorite summer grilling ideas really bring the flavor.  Let’s start with a robust Grilled Portobello Mushroom Burger that comes with a little bit of a cayenne kick. And the best part? No cholesterol and only one gram of saturated fat.

Gas grilling is one of the joys of summer. For those all day family reunions, neighborhood block parties, or just about any summer celebration, your propane grill will see you through. When you’re the cook and you want to be part of all the other fun, it’s great to know you just turn the knob and start grilling for as long as 15 to 20 hours on one tank. No need to spend hours trying to get charcoal briquettes to stay hot enough to feed a gang of people all afternoon and into the evening.

After all, the cook wants to get in a few innings of Whiffle ball too!

After everyone’s worked up an appetite, you can be the hero with a platter full of Grilled Lime Honey Glazed Chicken. Using flavorful dark meat chicken thighs, and a marinade that mixes the savory with the sweet, you’ll have a guaranteed crowd pleaser. At only 227 calories per serving, this is definitely heart healthy.

A healthy lifestyle doesn’t mean a bland diet of celery and tomato juice. Choosing a variety of foods that provide nutrients, vitamins, protein, and the right amount of carbohydrates will give you a balanced, delicious food experience. That can happen on the propane grill just the same as in the kitchen. (And by the way, a propane grill is much better for the environment than a charcoal grill. Propane is a clean burning and EPA certified green energy.)

For those carnivores who think it just isn’t summer without meat on the grill, gather round for some Grilled Flank Steak with Roasted Corn Vinaigrette—and don’t feel guilty. Flank steak is low in fat and low in cost. It’s also perfect for marinating. When buying a flank steak, look for one that’s as uniform as possible in thickness. This keeps you from getting a steak that’s rare in the middle and over done on the ends.

And when you’re done? No need to break out the steel wool to clean the grill. Turn the burners on high for a few minutes, scrape down the grate, and just like that, you’re ready for strawberries and cream.
